The piece that started it all. A single-piece serving tray over a deep ice chamber, in 0.9mm AISI 304 stainless steel, with the centre pressed into a recess for cocktail sauce. A generous 13.5 inch serving surface that comfortably holds up to 2 lb of large shrimp, with ice underneath to keep the presentation cold.

Why it works

What the piece actually does

  • Two pieces that work together

    A deep ice chamber below, an elevated serving tray above. The tray lifts the seafood clear of the meltwater while the chamber holds the ice, which is what keeps a cold course cold rather than merely cool.

  • A single pressed tray, no openings

    The upper tray is formed from one piece of steel, with the centre pressed into a recess for cocktail sauce. There is no hole, no seam and no separate insert, so the sauce cannot reach the ice below it and there is nothing extra to wash or lose.

  • AISI 304 stainless steel, 0.9mm

    Not plated, not coated, and not the thin gauge that flexes when a tray is loaded. 304 resists corrosion from salt and acid, takes a mirror finish without plating that will eventually peel, and conducts cold well. The 0.9mm heavy gauge is what keeps a 13.5 inch tray rigid when it is full.

  • Generously sized

    13.5 inches across, 2.75 inches tall. It comfortably holds up to 2 lb of large shrimp. A single ring, which is the cleanest way to serve, uses roughly half that. Two rings or a loose arrangement takes the rest.

  • Not only for shrimp

    Oysters on the half shell, ceviche, crab claws, chilled asparagus, caviar service, or watermelon with feta and mint in high summer. The same bed works for all of it.

  • Guaranteed for life

Using it

Build the bed properly and it outlasts the party

Crushed ice, not cubes. Fill to just below the rim and press it flat. Then chill the assembled piece, empty, for ten minutes before the shrimp go on. Cooling the metal first is the step almost everyone skips. Built this way, the well stays cold well past two hours, and closer to three in summer conditions.

Care

Looking after it

  • Wash by hand in hot soapy water before first use and dry with a soft towel.
  • Rinse promptly after every use. Acids and oils left standing will dull the finish.
  • Dishwasher safe, though hand washing preserves the mirror finish considerably longer.
  • Never use steel wool or abrasive cleaners.
  • Do not cut or stir directly against the surface.
  • Dry fully before storing. Stainless will not rust, but standing water leaves mineral spots.
